         We chose to substitute regular wheat flour with the complementary flavor profile of spelt flour. Spelt flour breathes new flavor depth into this recipe, combining the nuttiness of the flour to the raisins inside. Not to mention the array of added health benefits for your body just from this simple alternative. 

Tips & Facts

If you are unfamiliar with spelt flour and don’t know where to start, here are some quick tips and facts to help with your baking:

  • Spelt flour contains gluten which helps bind food together, however the gluten in spelt is slightly more delicate than wheat gluten, so it requires special attention when using it in baking or cooking.
  • When substituting spelt flour for wheat flour, use as a one-to-one ratio substitute for whole wheat flour and up to half the flour in recipes calling entirely for all-purpose flour.
  • Spelt flour has a lighter, sweeter flavor than traditional whole wheat flour with a slight nuttiness. This can greatly add to the depth of flavor in a variety of recipes over wheat.
  • This flour is LOW FAT! A single 2 Tbsp serving has 3g of dietary fiber, 4g of protein, and only .5g of fat. Not to mention, it’s a whole grain source of vitamins and minerals like iron, zinc, manganese, phosphorus, vitamin B3, and magnesium.

Spelt and Oatmeal Raisin Cookies

Ingredients 

– 1/2 cup + 1 tbsp Canola oil
– 2 cups Rolled oats
– 1 cup Shipetaukin spelt flour
– 1/2 tsp Baking soda
– 1 cup Jumbo raisins
– 2/3 cup Maple syrup
– 2 1/2 tbsp Skim milk
– 1 tsp Pure vanilla extract
– 1/2 tsp Kosher salt
pinch of flaky sea salt

 

Instructions:

  1.  Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, spelt flour and baking powder. Add the raisins and stir to combine.
  3. In a separate mixing bowl, whisk together maple syrup, milk, vanilla and salt. Add in the oil and whisk until well combined. Add the wet ingredients to the dry ingredients and fold gently until well mixed and there is no dry flour showing. The batter will be wet. It will thicken up as the batter rests. Let it sit at room temperature for 15-20 minutes.
  4. Using an ice cream scoop or 1/4 cup measuring cup, so all cookies are about the same size, scoop the batter and place on the prepared baking sheet. Use a fork to flatten the tops of the cookies a little.
    These cookies don’t spread much so only leave about one inch between each cookie.
  5. Bake until the edges are golden brown, about 12-15 minutes. Sprinkle with the flaky salt as soon as they come out of the oven.
  6. Let cool on the baking sheet then cool completely on a rack. Cookies will keep for a few days in a sealed container. Serve with a glass of cold milk for the perfect snack or dessert. Enjoy!
