MILLET FLOUR

Soft and naturally gluten free, millet flour is made 100% from millet seed. Millet is frequently described as an ‘ancient grain’ because it has remained largely unchanged over the past few centuries. It acts much like other whole grain and carries similar nutritional benefits.

USE IN BAKING MIXES OR AS A THICKENER

Its soft, finely ground, and dry consistency create a naturally crumbly texture when baking. We recommend if baking gluten free and using only millet flour, to consider adding xanthan gum as a gluten free binding agent to offset this.

It can also be used as a gluten free thickener in sauces, gravies, or stews.

USE AS A SUBSTITUTE FOR WHEAT FLOUR

Millet flour can be used as a substitute for wheat flour when making bread, tortillas, flatbreads, cakes, pie crusts or other baked goods. Consider combining with other gluten free flours such as rice flour, chickpea flour, fonio flour, or tapioca flour to create a versatile custom all-purpose flour blend.

While millet flour is a great wheat alternative, it is not an equal substitute; It is recommended to substitute up to ⅓ of all-purpose flour in your favorite recipes.
