Ingredients

– 1 cup Shipetaukin Wheat Berries
– 3 cups arugula
– 1/4 cup flat leaf parsley, chopped
– 2 tbsp fresh dill, chopped
– 1/2 cup pomegranate seeds
– 1/4 marcona almonds
– 1/2 cup dairy-free feta cheese

Dressing:
– 2 tbsp olive oil
– 2 tbsp balsamic vinegar
– Juice of 1 lemon
– 1 tbsp maple syrup
– 1 tsp Dijon mustard
– 1/2 tsp pink salt
– 1/4 tsp pepper

 

 

Instructions:

 

  1. Cook the wheatberries according to package instructions.
  2. Mix up dressing in a small bowl.
