Tips & Facts

If you are unfamiliar with millet flour and don’t know where to start, here are some quick tips and facts to help with your baking:

  • Millet flour is made from 100% organic millet seed. It acts much like any other whole grain and carries similar nutritional benefits. Appearance is similar to yellow cornmeal, and adds a lightly sweet flavor and crumbly texture to baked goods.
  • Substitute millet flour for up to 1/3 of all-purpose flour in your favorite recipes; Use in breads, pancakes, muffins, tortillas, flatbreads, cakes and pie crusts.
  • Millet flour is RICH in nutrients such as copper, iron, magnesium, phosphorus, and manganese which are vital to human health. Millet provides more essential amino acids than most other grains, as well as vitamins like folate, pantothenic acid, niacin, riboflavin, and Vitamins B6 & E. It is also a lower glycemic index than wheat flour.

Peanut Butter Waffles

Servings: 2-4 waffles

Ingredients

+ 1/2 cup Unsweetened vanilla almond milk
+ 1 Small ripe banana
+ 4 tbsp Creamy peanut butter
+ 1 tbsp Maple syrup
+ 1/8 tsp Kosher salt
+ 1/2 Millet flour
+ Cooking spray

Toppings (optional)

+ Maple syrup
+ Powdered Sugar
+ Fresh berries
+ Jelly or Jam
+ Chopped peanuts

Directions

  1. Following your waffle maker’s instructions, preheat waffle maker.
  2. Place all waffle ingredients, except millet flour, in your blender and blend until completely smooth. Add the millet flour and blend once again to combine.
  3.  Spray the preheated waffle maker with the cooking spray.
  4. Mix eggs, melted butter, vanilla extract, and almond extracts until well combined.
  5.  Pour just enough of the batter into the preheated waffle maker to fill the cavity. Close the lid and cook until either the waffle maker alerts you it is done, or the waffle is completely set and golden brown. Follow the manufacturer’s instructions.
  6. Remove waffle and place on a baking sheet and put in the 200-degree F. oven to keep warm while you make your other waffle (s). Once all the waffles are made, serve them on a platter with your choice of toppings. See some of my favorites recommended under toppings .
