Ingredients 

-½ cup cooked Shipetaukin Wheat Berries
-2 cups Shipetaukin Wheat Berries ground into flour
-1 cup all-purpose flour
-1 tbsp cold butter
-1 cup warm milk (120-130 F)
-1 packet instant yeast
-½ cup chopped nuts or seeds (optional)
-1 ½ tsp pink himalayan salt
-1 tsp granulated sugar
-1 egg white + 1 tbsp water

 

 

Instructions:

1. Mix together cooked wheat berries, wheat berry flour, and cold butter in a food processor or a blender until well combined. Pour mixture into a large mixing bowl and add yeast, salt and sugar. Set aside. 

2. Heat milk in the microwave until it reaches between 120-130 F. Combine warm milk with dry mixture. Add in all-purpose flour, knead until combined. Add in nuts or seeds (optional), and knead dough for 5-10 minutes. 

3. Form dough into a ball, place in a greased bowl and cover with a tea towel. Let dough rise for 1 ½ hours. 

4. Grease a loaf pan. Form dough to fit the loaf pan, and let it rise again until it’s doubled in size.


5. Preheat the oven to 425 degrees. 

6. Whisk the egg white with 1 tbsp of water and brush over top of the loaf. Cut slits into the top of the loaf, and bake for 20-25 minutes or until the loaf reaches an internal temperature of 190 F.
