We chose a refreshing lemon blueberry flavor combined with blended coconut sugar to maintain high fat with a low sugar content. As well as the use of coconut flour in this recipe gives an almost cookie dough type texture creating the perfect bite.

          The best part about these bite-sized desserts? With less than 10 ingredients and little to no prep necessary, you can enjoy these treats right after making or by popping them in the freezer for just a few minutes. Not to mention, the fats in this recipe are all healthy fats, so you can eat these knowing you’re not consuming highly-processed ingredients.

         Additionally, we wanted to make these keto fat bombs enjoyable by many. That’s why we chose the baking flour alternative of coconut flour. Coconut flour is gluten-free and LOW CARB. Breathing new flavor depth into this recipe while not taking away from refreshing flavors of lemon and blueberry. Not to mention the array of added health benefits your body gets just from this simple alternative. 

Tips & Facts

If you are unfamiliar with coconut flour and don’t know where to start, here are some quick tips and facts to help with your baking:

  • When using coconut flour as a wheat substitute it is recommend to use ¼ cup of coconut flour for every cup of wheat flour, as well as 1 egg (or egg replacer) to help baked goods hold shape. 
  • Due to the nature of coconut flour being light and fluffy, it is also highly absorbent. Moreover, when using it in any recipe (substitute or not) it’s recommend to use extra liquid or egg to help baked goods bind together easier.   
  • Coconut flour is LOW CARB! A single 2 Tbsp serving has 4g of dietary fiber (14 percent DV), 2g of protein, and only 8g of carbohydrates (3 percent DV). Furthermore, it has a lower glycemic index than wheat flour and it’s rich fiber density helps regulate blood sugar levels.

Lemon Blueberry Keto Fat Bombs

Ingredients

+ 8oz block of cream cheese
+ ½ cup shipetaukin coconut flour
+ ¼ cup coconut oil
+ ¼ cup coconut sugar, superfine with a blender or food processor
+ 1 tsp vanilla
+ Juice from 1 lemon
+ 1 tbsp lemon zest
+ ½ cup dried blueberries
+ ¼ cup shredded coconut, sweet or unsweetened

Directions

  1. In a medium bowl, mix together cream cheese, lemon juice, lemon zest, and coconut oil.
  2. Add in sifted coconut flour, superfine coconut sugar, dried blueberries and shredded coconut. Mix until well combined.
  3. Using a cookie scoop or your hands, form mixture into tablespoon sized balls.
  4. Freeze for at least 30 minutes. Store in the fridge for up to a week, or in the freezer for up to 6 months.
