Nothing screams summer quite as much as a freshly ripe, juicy peach. Luckily, there is an endless amount of delicious recipes celebrating this fruit to choose from while it’s in season. From pies and cobbler, to muffins and ice cream,  a peach galette is not a recipe that often pops up on the radar. However, they are one of the easiest beginner pastries for the aspiring baker. 

         A Peach galette is essentially a free form tart or pastry – combining all the flavors and elements of pie, but easier and quicker to make. In fact, galettes are a perfect example of France’s time-honored relationship with baking.

         Nonetheless,  in our version we chose to substitute regular wheat flour in the pastry with the complementary flavor profile of spelt flour. Spelt flour breathes new flavor depth into this recipe, combining the nuttiness of the flour to that in the brown sugar almond flour mixture inside. Not to mention the array of added health benefits for your body just from this simple alternative. 

Tips & Facts

If you are unfamiliar with spelt flour and don’t know where to start, here are some quick tips and facts to help with your baking:

  • Spelt flour contains gluten which helps bind food together, however the gluten in spelt is slightly more delicate than wheat gluten, so it requires special attention when using it in baking or cooking.
  • When substituting spelt flour for wheat flour, use as a one-to-one ratio substitute for whole wheat flour and up to half the flour in recipes calling entirely for all-purpose flour.
  • Spelt flour has a lighter, sweeter flavor than traditional whole wheat flour with a slight nuttiness. This can greatly add to the depth of flavor in a variety of recipes over wheat.
  • This flour is LOW FAT! A single 2 Tbsp serving has 3g of dietary fiber, 4g of protein, and only .5g of fat. Not to mention, it’s a whole grain source of vitamins and minerals like iron, zinc, manganese, phosphorus, vitamin B3, and magnesium.

Summer Peach Galette Recipe

Ingredients

Pastry Dough Ingredients

+ ½ cup Shipetaukin Spelt Flour
+ ½ cup all purpose flour
+ ¼ tsp salt
+ 1 stick of cold unsalted butter, cut up into pieces
+ 1 tbsp sugar
+ 1-2 tbsp cold water

 Filling ingredients

+ ¼ cup butter room temp
+ ¼ cup light brown sugar
+ 2 large, or 3 medium peaches, thinly sliced
+ ½ lemon, juiced
+ ½ tsp vanilla
+ 2 tbsp superfine sugar (granulated sugar in a blender/food processor)
+ 1 egg
+ ¾ cup ground almonds (almond meal)
+ 1 tbsp cornstarch
+ 1 tsp coarse sugar
+ egg wash

Directions

  1. Sift together spelt flour, all purpose flour, salt and sugar.
  2. Incorporate the butter either using your hands, or a food processor, until combined.
  3. Add water as needed if the dough is dry. Roll into a ball, wrap in plastic wrap and chill for 30 minutes. 
  4. While dough rests, preheat the oven to 350.
  5. In a small bowl, mix room temperature butter and brown sugar until fluffy.
  6. Whisk in egg slowly. Fold in the ground almonds, until a paste-like mixture is achieved. Set aside.
  7. In medium sized bowl, mix together peach slices, lemon juice, superfine sugar, cornstarch and vanilla.
  8. When pastry dough is ready, roll and shape into a 12” circle. Spread paste mixture in middle of circle, leaving room around the edges.
  9. Arrange peach slices on top, and fold sides of pastry over, but not completely covering the peaches. Brush the dough edge with an egg wash, and sprinkle coarse sugar on top.
  10. Bake for 30-35 minutes, or until the pastry is golden brown.
  11.  Serve with vanilla ice cream and enjoy!

     

    Tips:

    • Want a shinier, more glossy crust? When the galette is mostly cooled, brush the top of the crust with jam to create a glaze.
    • Get creative with fruit in season and swap out the peaches for blueberries or raspberries!
