This banana bread is simple to make and our favorite way to use up overripe bananas so they never go to waste. It’s super moist and makes a great breakfast on-the-go. Incorporating the flavors of cherry and chocolate perfectly compliment the banana. In other words, you’ll never go back to basic banana bread after trying this!

         Besides the delicious add-ins, what makes this banana bread shine is the use of spelt flour in place of regular wheat. Spelt flour not only adds a slight nutty flavor, but a range of health benefits not found in wheat. Specifically just a single serving of 1/4 cup contains .5g total fat, 3g of dietary fiber, and 4g of protein. Not to mention, spelt is a whole grain packed with vitamins and minerals like iron, zinc, manganese, phosphorus, vitamin B3, and magnesium.

About White Spelt Flour

In this recipe we use our light and fluffy white spelt flour. It is unbleached, all natural, and non-gmo. Use as a one-to-one ratio substitute for whole wheat flour and up to half the flour in recipes calling entirely for all-purpose flour. In addition, spelt has a light, sweeter flavor than traditional whole wheat flour with a slight nuttiness.

Toppings

While we decided to add chocolate chips, pecans, cherries, and a half banana to the top of our bread, feel free to mix it up with your favorite add-ins. For instance, try peanut butter, espresso chips, fruit jam, or cocoa powder.

Chocolate Cherry Banana Bread

Ingredients

+ 1 1/2 cup spelt flour
+ 1 tsp baking powder
+ 1 tsp salt
+ 1/2 cup butter
+ 1 cup coconut sugar
+ 2 eggs, room temperature
+ 1 tsp vanilla extract
+ 1 cup overripe banana, mashed (about 2 1/2 medium bananas)
+ 1/2 cup milk
+ 1/2 cup cherries, chopped
+ 1/3 cup chocolate chips, chopped
+ 1/3 cup pecans, chopped

Toppings
+ 1 banana
+ 1/4 cup chocolate chips

  1. First, preheat oven to 350F.
  2. Secondly, chop cherries, chocolate chips, and pecans, set aside.
  3. Next, in a medium bowl, sift spelt flour, baking powder, and salt.
  4. Then, in a separate bowl, cream butter and coconut sugar until combined well. One at a time add in eggs and vanilla extract.
  5. Mix in mashed bananas and milk to butter/sugar mixture.
  6. Then, combine dry ingredients a little at a time until you form a smooth even batter.
  7. Fold in cherries, chocolate chips, and pecans.
  8. Pour batter into a 4x6 inch pan lightly greased with butter.
  9. Cut banana in half vertically. Place both pieces with cut sides facing up on top of the batter.
  10. Finally, pour chocolate chips on top of the batter.
  11. Bake for 1 hour and 15 minutes.
  12. Once you take it out of the oven, let cool for 10-15 minutes before removing from pan.
  13. Slice and enjoy it warmed with butter, jam, or peanut butter.
