Crumbl cookies are coming up all over the internet, so we decided to make this copycat extra special by making gluten free cookies. We swapped out the traditional flour for chickpea flour so those of you who are gluten free can make these at home and join in on the Crumbl cookie fun.

About Chickpea Flour

Chickpea flour makes for a low glycemic gluten free and grain free alternative to traditional wheat flour. It can easily be combined with other single-ingredient flours and incorporates well into so many recipes. Chickpea flour is also high in both fiber and protein, giving these gluten free cookies a nutritious kick.

Storage: Store in airtight container in fridge or freezer.

Reheating: These are best enjoyed warm. Reheat in microwave for 30 seconds.

Buckeye Brownie Copycat Crumbl Cookies

Ingredients

Cookies
1 1/8 cup chickpea flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter softened
3/4 cup brown sugar
2 tbsp cane sugar
1 egg room temperature
2 tsp vanilla extract

Peanut Butter Layer
1/3 cup peanut butter
1 tbsp butter
1/2 cup powdered sugar
1 tsp brown sugar
1/2 tsp vanilla extract

Chocolate Topping
1/2 cup chocolate chips semi-sweet

  1. Preheat oven to 350F.
  2. Whisk chickpea flour, cocoa powder, baking soda, and salt until well combined.
  3. In a separate bowl, cream butter, brown sugar, and cane sugar until light and creamy.
  4. Mix in egg and vanilla extract until well combined.
  5. Stir in dry ingredients until well combined.
  6. Form 7 balls of cookie dough and place on lined baking sheet.
  7. Gently press down on cookies until they are 1 inch in thickness.
  8. Bake for 12 minutes.
  9. Let cookies cool and set.
  10. Mix peanut butter, butter, powdered sugar, brown sugar, and vanilla until combined well.
  11. Form 7 balls of peanut butter mixture.
  12. Gently press down to flatten each ball until it forms a thin layer and then place one on top of each cookie.
  13. Melt chocolate chips and pour over peanut butter layer on each cookie.
  14. Spread chocolate to help it better cover the peanut butter.
  15. Enjoy!
