This cozy dish is perfect for warming up on a cold winter day. It makes a wonderful meal on its own or you can serve it as a side.

About Fonio

In this recipe we use the commonly unheard of African grain Fonio in place of the traditional elbow pasta or couscous. If you’re unfamiliar with this grain, check out our article about the many health benefits this tiny grain has to offer as well as all the ways it can be incorporated in your kitchen.

Toppings: We used parmesan cheese and red pepper flakes, but feel free to swap with your favorites. Try cheddar cheese, bacon, crackers.

Baked Mac and Cheese

Ingredients

1 1/3 cup water
2 tbsp butter
2/3 cup fonio couscous + 1 cup monterey jack cheese, shredded
1 cup cheddar cheese, shredded
1/2 cup parmesan cheese, shredded
1/4 cup tomatoes, chopped
1/4 cup yellow onions, chopped
2 tbsp scallions, chopped
1/4 tsp basil
1/4 tsp salt

Toppings
3 tbsp parmesan cheese
1/8 tsp red pepper flakes

  1.  Pour water into medium saucepan and place on stove on high heat.
  2. Add butter to water and bring water to a boil.
  3. Stir in fonio and allow to briefly return to a boil. Cover, remove from heat, and let stand for 5 minutes.
  4. Preheat oven to 350F.
  5. Grate cheese into shreds if not using pre-shredded cheese.
  6. Chop tomatoes, onions, and scallions.
  7. In a large mixing bowl, combine fonio couscous, cheeses, tomatoes, onions, scallions, basil, and salt until all ingredients are evenly distributed.
  8. Scoop into 4x6 inch baking dish and top with parmesan cheese.
  9. Bake for 20 minutes.
  10. Top with a sprinkle of scallions, red pepper flakes, and basil and Enjoy!
