This Gluten free fonio banana bread is light and airy. The fonio flour adds a delectable sweet nutty flavor.

INGREDIENTS:
1/2 C oil or melted butter, cooled
1/2 C granulated sugar
1/4 C brown sugar
4 medium very ripe bananas; roughly 1 1/2 C mashed banana
2 tsp vanilla
2 large eggs
1/2 tsp salt
1 tsp baking powder
1 tsp ground cinnamon
3/4 C GF all purpose flour
1/2 C Shipetaukin Fonio Flour
1/2 C GF rolled oats

DIRECTIONS:
1) Preheat oven to 350 degrees. 

2) Lightly grease, or line with parchment paper, a 9x5″ loaf pan. 

3) In a large bowl combine the flours, rolled oats, baking powder, salt and cinnamon. Whisk until well combined.

4) In a separate bowl, mash the bananas. Then add in eggs, oil/butter, vanilla, and sugars. Whisk until well combined. 

5) Pour the wet ingredients into the dry, stir together. Do not over mix.

6) Pour batter into prepared loaf pan. Bake at 350 for 50-60 minutes; until toothpick inserted into center of loaf comes out clean. Let cool on a wire rack for 20-30 minutes. Delicious when served warm with butter!
