These gluten free chocolate chip fonio cookies are absolutely divine. Quick, easy, delicious, and gluten-free, everyone in your family will be asking for more.

INGREDIENTS:
1/2 c unsalted butter at room temp
1 egg at room temp
1/2 c granulated sugar
1/2 c packed light brown sugar
1 Tbsp vanilla
1 tsp baking soda
1/2 tsp xanthan gum (omit if flour mix already has it)
1/2 c Shipetaukin Fonio Flour
1/2 c GF all purpose flour of your choice
1/2 tsp salt
1/2 c semi sweet chocolate chips
1/2 c walnuts or other add-in of your choice

DIRECTIONS:
Preheat the oven to 325 degrees.

Line a baking sheet with parchment paper.

Combine in a large bowl the flour, baking powder, salt and xanthan gum if you’re using it.

In a large mixing bowl beat together the butter, brown sugar, granulated sugar, and vanilla until smooth. Add in the egg and beat well. Gradually add in the flour mixture. Mix in chocolate chips and the add in of your choice. 

Chill the dough for 30 minutes.

Drop rounded tablespoons of cookie dough onto a lined baking sheet. Press down onto the balls with your thumb or the back of a spoon to flatten them a bit.  

Bake each batch for 12-14 minutes, until golden brown.
