Spelt Flour is perfect for muffins, as it has a nutty flavor and produces a fine tender crumb. Our special fruit blend (apple and peach) gives these muffins a sweet flavor and chewy texture.

 
INGREDIENTS:
2 eggs
1 cup plain greek yogurt
⅓ cup honey
¼ cup avocado oil
1 teaspoon vanilla extract
2 cups Shipetaukin Spelt Flour
1 teaspoon cinnamon
2 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾  cup diced peaches
¾ cup diced apples

DIRECTIONS:
1. Preheat oven to 350°F and line muffin tin with paper muffin cups.
2. In a large mixing bowl, whisk together eggs, greek yogurt, honey, avocado oil, and vanilla extract, set aside.
3. In a medium mixing bowl, sift together spelt flour, cinnamon, baking powder, baking soda, and salt until thoroughly combined. 
4. Slowly add dry ingredients to wet ingredients and stir gently, as to not over mix.
5. With a spatula. fold in diced peaches and apples.
6. Using a large ice cream scoop, fill muffin liners so they are about 3/4 full.
7. Bake for 20-25 minutes or until toothpick inserted in the middle comes out clean.
8. Remove from oven and let muffins cool for at least 30 minutes before transferring onto cooling rack. Enjoy!
