Quick, easy, delicious, and gluten-free, everyone in your family will be asking for more. Its creamy texture and slightly sweet flavor makes this pudding ideal for even the pickiest of eaters! Extra bonus, it is made with the ancient grain fonio, giving it an extra nutritional punch.

INGREDIENTS:
1 egg 
1 egg yolk
¼ cup brown sugar
1 tsp vanilla extract
2 ½ cups milk 
Pinch of salt
½ cup fonio
Cinnamon to taste

DIRECTIONS:
Whisk together the egg, yolk, brown sugar and the vanilla. Set aside. In a medium saucepan combine the milk salt and fonio cook until the fonio is tender. Once the fonio is cooked temper the mixture into the egg mixture one ladle full at a time. After half of the fonio is in the eggs transfer back into the pan and cook on low heat for five to ten minutes or until thickened. Add some cinnamon and serve warm or cold.
