This gluten free cookie recipe is absolutely divine! Using Fonio Flour as the base, these cookies are more nutritious than most and are perfect for those with food sensitivities.

INGREDIENTS:
1 cup plus 2 Tbls Fonio Flour 
½ Tsp salt
½ tsp baking soda
¼ tsp xanthan gum 
1 oz softened cream cheese 
½ cup melted butter
½ tbls milk
¼ cup granulated sugar
½ cup packed brown sugar
1 tsp vanilla
1 egg yolk
1 cup semi sweet chocolate chips

DIRECTIONS:
Combine the fonio flour, salt, baking soda and xanthan gum, set aside. In a stand mixer with the paddle attachment combine the cream cheese, butter, milk, and both sugars. Mix until combined. Add the vanilla and the egg yolk and mix to combine. Add the flour mixture and mix. Finally, add the chocolate chips. Chill for four hours or overnight. Preheat the oven to 375. Let the dough sit for 15 mins before forming into balls. Bake on a cookie sheet with parchment paper for ten minutes.
